Oatmeal Crispies (Camille English)
Ingredients
  • 1 cup Shortening (Crisco)
  • 1 cup Packed Brown Sugar
  • 1 cup Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 3 cups Quick Oats
  • ½ cups Finely Chopped Pecans (I used almonds)
  • (I added a cup of rice crispies I figured they should have these given the name :)
Preparation Instructions
In a large mixing bowl, cream shortening with both sugars until well combined.
In a separate bowl, beat eggs together. Add vanilla and stir to combine. Add to the shortening/sugar mixture and mix well.
In a separate bowl combine the flour, salt and baking soda. Mix carefully into the egg/shortening mixture until well combined. Now add the quick oats and mix well again. Finally add the finely chopped pecans and mix well to combine.
Divide the dough in half and place each half of the dough onto a sheet of waxed paper. Roll the dough into a log and then wrap it tightly in the waxed paper. Now you can either chill or freeze the dough until later or you can go ahead and slice the dough evenly into cookie rounds.
When you are ready to bake them place them on a cookie sheet and bake at 350 degrees for 10 minutes until they are golden brown.

 

 

 

Big soft Gingerbread Cookies (Joyce Nicholes)

Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup margarine, softened
  • 1 cup white sugar
  • 1 egg
  • 1 tablespoon water
  • 1/4 cup molasses
  • 2 tablespoons white sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  2. In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.


Monster Cookies (Jay Lyn)
  • ·         1 stick of Butter (soft)
  • ·         1 ½ cup Brown Sugar
  • ·         1 c White sugar
  • ·         3 eggs
  • ·          1 tsp vanilla
  • ·         1 Tbsp light corn syrup
  • ·         2 tsp baking soda
  • ·         1 ½ c peanut butter
  • ·         4 ½ c old fashioned oatmeal
  • ·         2/3 c choc chips
  • ·         2/4 c M&M I like the minis)
Cream Butter and sugarsd together. Add rest of the ingredients in order and mix well make cookies BIG!!! Bake @ 350 for 8 minutes. Don’t over bake!!! Cookies will not look done when you pull them out leave them on the pan until cooled completly.


Chocolate Chip Cookies (Barb Short)
  • ·         ½ cup shortening
  • ·         1/2cup butter 
  •  
  • ·         ¾ c Br. Sugar
  • ·         ¾ cup sugar
  • ·         2 eggs
  • ·         2 tsp vanilla
Add:
  • ·         2 ¼ cup flour
  • ·         ½ tsp baking soda
  • ·         1 tsp salt
Add semi sweet choc chips and walnuts
Bake at 325 8-10 min

Peanut Butter Blossoms (Melissa Frantz)

  • 1 cup shortening
  • 1 cup Peanut Butter
  • 1 cup sugar
  • 1 cup Brown Sugar
  • 2 eggs
  • 1/4 cup milk 
  • 2 tsp vanilla
  • 3 1/2 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • Chocolate kisses
cream togther first four ingrtedients. Then add the eggs, milk and vanilla. Beat well.
Sift in flour, soda and salt. Mix until medium firm dough forms. Form dough into desired size balls and roll in sugar. Place on an ungreased cookie sheet and flatten dough balls just a bit and bake for 8 minutes at 350. Take out of oven and place chocolate kiss in the center of each cookie pressing down slightly. Remove cookies to cool on rack. (although in my opnion there are best when eaten hot!)

Mint Chocolate Chip Cookies (Kacey Beal)

1 cup Butter
1/2 cup powdered Sugar
1/2 cup Sugar
1 1/2 tsp peppermint extract
1 egg
6-8 drops green food coloring
1/2 tsp cream of tartar
1/2 tsp baking soda
1/2 tsp salt
2 1/2- 3 cups flour
1 cup choc. chips

Cream butter and sugars.  Add Vanilla, egg, green food colring, cream of tartar, baking soda, and salt.  Mix well.  Add flour and mix in.  Stir in chocolate chips.  Roll dough into balls.  Bake at 350 degrees for 8-10 minutes or until edges are just golden brown.
